緑茶の機能性、特にメチル化カテキン(べにふうき)の抗アレルギー作用、脂質代謝改善作用、糖代謝改善作用、アントシアニン(サンルージュ)の眼精疲労軽減効果を明らかにし、その作用機序、吸収性、高含有品種、品種の茶葉特性の解明、ヒト介入試験による効果の検証、機能性表示食品の開発や機能性農産物を組み合わせた機能性弁当の健康効果の検証を行っている。企業、大学等と連携して国産農林水産物による健康維持・増進効果を解明し、自らが設計する食生活により自分の健康を維持・増進する「セルフフードプランニングシステム」を確立したい。
