1991年に文部省科研費補助金重点領域研究「機能性食品の解析と分子設計」に参画したのを機に大学薬学部にて植物性食品の免疫調節作用を中心に食品機能研究を開始しました。現在は農研機構で野菜の機能性表示、高付加価値化を目指し、細胞、動物を用いた様々な活性探索、ヒト試験、栄養・機能性成分の分析・同定等に取り組んでいます。
