Theory and Application of Livestock Processing Technology

The chapter I wrote alone was "Sausage and Intestinal products”. In this chapter, it introduces specifically to the students the different types of casings, i. e. natural and artificial casings, where they come from, which parts of the intestines from different livestock are used for casing production. In addition, it compares the advantage and disadvantage of the different casings and their applications. Subsequently, it introduces the different types of sausage (Western and Chinese) manufactory and the functions and principles for each step. In order to render the students understand comprehensively, a lot of interesting and vivid colourful pictures were inserted into the textbook. This chapter includes approximately 35000 words along with vivid presentation for the textbook.
