果実の味や香り、色素に関連する成分変化を解析し、収穫後果実における品質変化の仕組みや制御方法を研究しています。具体的には、果実のおいしさや色素等の品質を維持しやすい収穫後の環境条件(貯蔵温度等)や取り扱い方法を調べています。これまでに、ウンシュウミカンのカロテノイドを減らさない条件や収穫後の品質変化を起こしにくい温度、シャインマスカットの香りを保ちやすい収穫後の温度管理を明らかにしました。
