目的 挽肉は調理が簡便なことから様々な加工食品へ利用されているが、流通過程において時間経過による品質劣化が懸念される。挽肉の品質劣化には、脂質酸化反応が主たる要因として挙げられる。本研究では、各種挽肉試料を用いて低温保存中の脂質過酸化反応の促進要因と、金属キレート剤添加による抑制効果について検討した。<br>方法 牛もも、豚もも及び鶏むね挽肉から試料を調製した。未加熱及び加熱試料を-20℃(冷凍)または4℃(冷蔵)で保存した。また、各挽肉の加熱試料に金属キレート剤であるEDTAを添加した。...
