Twelve ion exchangers and chitosan beads were tested as support carriers materials on the stability of the activity and handling convenience. Among these supports, porous and strong cation-exchangers of Diaion (RCP 170 H and HPK 25) showed the best results. Approximately 2,000 ml of soymilk curdled with a reactor containing 75 ml of the immobilized enzyme. Scale up of the reactor to 8 times in volume of immobilized-enzyme resulted in simply 8 times of product.
