The modelling of pathogenic bacterial growth, such as Listeria monocytogenes, in raw and minimally processed, ready-to-eat foods, such asfresh-cut produce and raw minced tuna, an ingredient of sushi, is reviewed. The growth models described take into account both the environment temperature and microbial competition in the food matrix, the microbial competition in the real food environment being a key consideration. Food-based predictive models are described that enable not only the direct estimate of microbial growth on these foods but also the validation of culture medium-based predictive models.
